At the turn of the century, Max Breandenstein opened his coffee shop in San Francisco and was among the first pioneers to vacuum pack his coffee. Upon opening a can of MJB coffee, the user is greeted by the swish sound of air filling the vacuum and the aroma of freshly roasted coffee. Max knew back then that the secret was FRESH.

 

Fast forward to the present. Indeed, there is nothing like coffee made from freshly roasted beans as one would experience from a pour-over, the gold standard in the industry. But how does that customer relive that experience from home or work, since we can’t live in the coffee shop? Now, Keurig has attempted to create that experience with their K-cups. Aside from the convenience, the quality of the single-serve pods fell far short, FAR short. What was lacking was the symbiotic relationship between the roasted bean and the packaged product. Clearly, this relationship can only be achieved if the pods are packaged on-site where the Artisan roaster is able to retain total control of the process.

 

As timing is important in the roasting process, this need carries over to the packaging of the pod as well.. By packaging the coffee while it is still out-gassing, it becomes possible to capture the peak flavor of the coffee, a fact not lost by Max J Brandenstein (creator of MJB Coffee in 1899). The timing between the grind and the package is critical: too early and the pressure may compromise the lid; too late and the peak will be missed. Since each bean-roast combination is unique, this relationship is experimentally determined.

 

Pods so packed achieve a chemical equilibrium between the out gas mechanism and the pod pressure, effectively stopping the “aging clock” and repelling the entrance of O2. As long as the lid retains its’ domed shape, the coffee will taste every bit as good as the first day the pod was packed and truly rival the classic pour-over. Finally, and as was the case with Max, you will be treated to that “pshh” sound and the overpowering aroma of fresh coffee. The secret sauce.
