The thermal seal of the pod to lid  (like compostable materials) can be likened to a weld and sufficient to withstand outgas pressure which in turn causes the lid to be domed.   A  chemical equilibrium is achieved that in effect stops the “aging clock” and keeps O2 from entering the pod.
